Vegan Coconut Milk Ice Cream
2 cans full fat coconut milk, refrigerated if you live in a warm climate
1/3 c – ½ c Pure Grade B Maple Syrup
2 tsp pure vanilla extract
Place all ingredients in a blender and mix until smooth and creamy. The amount of maple syrup will determine how sweet you want your ice cream. Freeze in ice cream maker according to the instructions.
Scoop out your super creamy, delicious ice cream and enjoy. Have fun with toppings such as toasted coconut, dark chocolate chips, fruit, crushed raw nuts, chopped dates, or a sprinkle of cinnamon.
To store leftovers, place in a freezer safe container. Cover top of ice cream with plastic wrap to avoid air getting to it, and then place on the container lid. To eat, let it sit out on the counter for 15 minutes to soften up.
